Recipe
Shahi Biryani

Ingredients:
2 tablespoons Shahi Biryani Masala
1 lb chicken or mutton, cut into pieces
2 cups basmati rice, soaked for 30 minutes
1 large onion, finely sliced
2 tomatoes, chopped
1/2 cup yogurt
2 tablespoons oil or ghee
1 teaspoon ginger-garlic paste
Salt to taste
Fresh cilantro and mint for garnish
Saffron strands soaked in warm milk (optional)

Instructions:
Heat oil or ghee in a pan and sauté the onions until golden brown. Set aside half for garnishing.
Add ginger-garlic paste to the remaining onions and sauté for another minute.
Add chopped tomatoes and cook until soft.
Stir in Shahi Biryani Masala and cook for 2 minutes.
Add chicken or mutton pieces and cook until lightly browned.
Add yogurt and cook until the oil separates from the mixture.
Meanwhile, cook the soaked basmati rice until 70% done.
Layer the partially cooked rice over the meat mixture. Top with saffron milk, if using, and the reserved fried onions.
Cover tightly and cook on low heat (dum) for 20-25 minutes.
Garnish with fresh cilantro and mint. Serve hot with raita.
