Biryani
Ingredients:
2 cups premium basmati rice
4 cups water
500 grams chicken, cut into pieces
2 large onions, thinly sliced
2 tomatoes, chopped
1 cup yogurt
3 tablespoons ghee or vegetable oil
1 tablespoon ginger-garlic paste
2 green chilies, slit
1 cinnamon stick
4-5 whole cloves
4-5 whole green cardamom pods
1 bay leaf
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala powder
1/2 teaspoon coriander powder
Fresh cilantro and mint leaves, chopped
Salt to taste
Saffron strands soaked in 2 tablespoons warm milk (optional)
Instructions:
Prepare the Rice:
Rinse the basmati rice under cold water until the water runs clear.
In a large pot, bring 4 cups of water to a boil.
Add the rinsed rice, a pinch of salt, and a few drops of oil. Cook until the rice is 70% done (the grains should be firm but not fully cooked). Drain and set aside.
Cook the Chicken:
In a large pan, heat 2 tablespoons of ghee or oil over medium heat.
Add the sliced onions and fry until golden brown and crispy. Remove half of the fried onions and set aside for garnish.
To the remaining onions, add ginger-garlic paste and sauté for 2 minutes.
Add green chilies, cinnamon stick, cloves, cardamom pods, bay leaf, and cumin seeds. Sauté for another 2 minutes.
Add chopped tomatoes, turmeric powder, red chili powder, garam masala powder, coriander powder, and salt. Cook until the tomatoes turn soft.
Add chicken pieces and yogurt. Cook on medium heat until the chicken is fully cooked and the oil separates from the masala.
Layer the Biryani:
In a large heavy-bottomed pot, spread a layer of the partially cooked rice.
Add a layer of the cooked chicken masala.
Sprinkle some chopped cilantro and mint leaves.
Repeat the layers until all the rice and chicken are used, finishing with a layer of rice on top.
Drizzle the saffron milk (if using) over the top layer of rice.
Sprinkle the reserved fried onions on top.
Dum Cooking:
Cover the pot tightly with a lid or aluminum foil to seal the steam.
Cook on low heat for 20-25 minutes (this process is known as 'dum' cooking), ensuring the flavors meld together.
Serve:
Fluff the biryani gently with a fork, mixing the layers.
Serve hot with raita, salad, or pickle.
